Natural cacao powder is the purest form of cocoa powder that has a slightly higher level of antioxidants compared to alkalized cocoa powder. Not only does it have a richer aroma, but also more acidic as it has a lower pH level.
Alkalized cocoa powder is less acidic and is more soluble than the natural ones because it has higher pH level and contains potassium carbonate. In general, the color of alkalized cocoa powder is darker than the natural cocoa powder. The higher the pH is, the darker the color gets.
The application of cocoa powder varies based on preferences. For instance, both alkalized and natural cocoa powder are used in hot chocolates and nutrition bars. Alkalized cocoa powder is popular in ice cream and cold beverages, while the natural ones is common in white chocolate. Black cocoa powder is favored for darker creations like brownies.
